How to grow herbs

Herbs sit at the crossroads of kitchen, garden and medicine cabinet. A small collection of culinary herbs — basil, parsley, chives, mint, thyme, rosemary, coriander — can transform everyday cooking and occupy no more space than a window box. Mediterranean herbs like thyme, oregano and sage thrive in poor, well-drained soil and full sun, making them ideal for gravel gardens and raised beds. Moisture-loving herbs such as mint, lovage and chervil prefer richer, damper conditions. Herbs also earn their place in the ornamental garden: tall fennel, architectural lovage and flowering chives are as beautiful as they are useful. Each guide covers the best growing conditions, harvesting techniques and how to preserve or dry your crop for year-round use.
